Clean Fruit & Nut Chocolate

  • ¾- 1 cup organic cacao/cocoa powder (depending on how intense you like your chocolate)
  • ¾ cup coconut oil
    4-5 tbsp maple syrup (or use a few drops of liquid stevia if you’re trying to keep the carb. count down – I used a combination of both. Taste as you go for desired sweetness)
  • ⅓ cup roasted almonds (or use a combination of nuts such as macadamias, walnuts, hazelnuts etc …)
  • A pinch of sea salt – I used my fave Himalayan rock salt of course 😉
  • 1 heaped tbsp each of goji berries, pumpkin seeds & sunflower seeds, shredded coconut, and caramelised buckinis (optional – I just had these in the pantry and love the crunch they contribute to the texture)

Line a slice tin with baking paper. To roast your almonds/nuts, put them into oven preheated to 180C for about 10-15 minutes.

In a double boiler (or microwave set to med-low heat) gently melt the coconut oil and add the syrup/sweetener, allowing it to dissolve. Remove from heat and stir or whisk in the cacao powder and salt.

Pour the melted chocolate into your tin. Scatter evenly with the roasted almonds/nutsand the rest of your chosen fruits, seeds etc.  Place in the fridge for an hour or until set firm.
