Superfood Hedgehog Slice…  

*Dairy, *Sugar Free, *Egg Free,*Gluten Free

 

Ingredients:

  • 100g (½ cup) melted coconut oil
  • 60g (½ cup) raw cacao powder
  • 2 tbsp. (20g) Natvia (or preferred sweetener)
  • 1/4 tsp. almond extract (available at Aldi. If unavailable, vanilla would work too)
  • 20g (2 tbsp.) mesquite powder (or a bit more cacao)
  • 20g (2 tbsp.) chia seeds
  • 100g (1 cup) slivered almonds
  • 100g (1 cup) walnuts
  • ¼ cup goji Berries
  • ¼ cup caramelised buckinis – optional  (I used https://lovingearth.net/products/108/caramelised-buckinis-organic-activated you could also use puffed brown rice.)

 

Ganache Topping

  • 90g Well Naturally AntiOx Dark chocolate (Goji flavour), broken into small pieces. (You can just use good quality dark chocolate instead.)
  • 1 tsp. melted coconut oil
  • 2 tbsp. thick coconut cream
  • Flaked or slivered almonds to garnish

 

Method:

Slice

  • Gently melt the coconut oil either in microwave, on the stovetop or using the Thermomix ( 2 mins / 60˚C / speed 3,)
  • Stir the cocoa, sweetener, hazelnut extract into the melted coconut oil. (30 sec / Speed 3)
  • Place this combined mixture and the rest of the slice ingredients into a food processor. Pulse a couple of times to combine being careful not to over mix and lose the nice chunky texture of your fruits/nuts. Simply add remaining ingredients to TM bowl and process (5 sec / speed 5.)
  • Line a small tray (about 20cm square) with a bit of coconut oil and baking paper (or cling wrap if you have none) and gently press the in the mixture evenly.
  • Refrigerate  for 15 minutes while you make the ganache.

 

Ganache Topping

  • Combine chocolate and coconut oil in microwave or over double boiler until melted and whisk until smooth.  Remove from heat and whisk in the coconut cream until smooth and silky.  (TM –  Grate chocolate for  5 secs / speed 8. Add coconut oil and melt for 2 minutes at 60˚C on speed 3, or until melted.)  Cool slightly.
  • Pour out evenly on top of the slice, sprinkle with the coconut and store in the fridge until ready to serve.
  • When cold, run a knife around the edges of the slice to make it easier to remove and then  lift the slice out by the edges of the baking paper or by inverting and knocking out.
  • Cut into Squares or bars.
