Snickers Slice:

*Gluten Free, Dairy Free, Sugar Free, Vegan, Paleo Friendly

Base

2 cups almonds
12 medjool dates
1/2 c shredded coconut, lightly toasted.

Process nuts until they are a crumb-like texture. Then add dates and coconut and process until it becomes sticky. Press into the bottom of a square or rectangular tart pan with a removable base

Layer 1
2 cups cashews (soaked 2-4 hours, rinsed and drained)
½ cup activated buckwheat
1 cup coconut water
½ cup coconut oil
⅓ – ½ cup natvia or preferred sweetener
1 tbsp maca powder
1 tbsp mesquite powder
1 tsp cinnamon

Blend all ingredients until creamy (a regular blender will do the trick, but you’ll have to blend for a while to ensure it’s smooth). Pour onto base and refrigerate.

Layer 2 – caramel sauce
12-14 medjool dates (soaked for 10 mins)
Up to 1/2 c coconut water
1 tsp vanilla

Place all ingredients in food processor and process until it becomes a thick sauce consistency. Add more (or less) coconut water until the right consistency is achieved. Spread date paste over slice. Return slice to refrigerator.

Top – chocolate
1/2 c coconut oil, melted
6-8 drops liquid stevia*
2 tbsp raw cacao powder

Whisk all ingredients until smooth, ensuring no lumps. Spread over slice and return to refrigerator to set.

Cut into slices and enjoy
