Banana Bread

Easy AS Banana Bread

*Gluten Free, Refined Sugar Free, Dairy Free, Nut free

 

Ingredients:

  • 380g ripe banana flesh ( about 3 medium to large bananas)
  • 8 medjool pitted dates, seeds removed or 150g Rice Malt Syrup
  • 50g tahini (OR a nut butter such as almond butter, if you can tolerate nuts)
  • Juice of 1/2 lemon (about 30g)
  • 2 tsp. ground cinnamon
  • 80g (2/3) cup coconut flour
  • 1 teaspoon baking soda
  • 4 eggs (room temperature is best)
  • pinch of Himalayan pink salt

Method

  1. Preheat your oven to 180C (or 170C fan forced)
  2. Grease and line a loaf tin.
  3. In a food processor, blend the bananas and dates (or rice malt syrup) together until smooth. Add all other ingredients and mix until well combined.
  4. Pour mixture into the prepared tin.
  5. Bake for 45 minutes, or until skewer comes out cleanly when inserted into centre of loaf.

 

Thermomix Instructions

  1. Preheat your oven to 180C (or 170 fan forced)
  2. Grease and line a loaf tin.
  3. Place bananas and dates/syrup into TM bowl and process until smooth – 10 Sec / Speed 6.
  4. Scrape sides of bowl and add remaining ingredients to TM bowl. Blend 20 Sec / Speed 4. Scrape sides and repeat – 20 Sec / Speed 4.
  5. Pour mixture into the prepared tin.
  6. Bake for 45 minutes, or until skewer comes out cleanly when inserted into centre of loaf.
