Man Pleasing Chicken

  • 6 chicken thighs (approx. 1.2kg)
  • ½ cup (125g) of Dijon mustard
  • ¼ cup (60ml) of pure maple syrup
  • 1 tbsp. of rice wine vinegar (check label to ensure GF)
  • Freshly ground sea salt & pepper
  • Fresh rosemary, finely chopped



  1. Preheat your oven to 220 Celcius
  2. In large jar or mixing jug mix together the Dijon mustard, maple syrup and vinegar. Give it a good shake to combine the ingredients. Place the thighs in a bowl. Season with salt and pepper and then pour the sauce mixture over the thighs and mix through well.
  3. Pour the contents of the bowl into a foil-lined, oven-proof baking dish.
  4. Place dish on the top shelf of your oven (you want that top element to brown and caramelise the thighs a little.) Cook for 30 minutes, or until tops are browning and they feel firm to the touch.
  5. Garnish with some rosemary, and serve! (Lovely with a nice crisp green salad!)
