Easy Chocolate Chia Pudding

Gluten Free, Sugar Free, Egg Free, Dairy Free

 

Ingredients:

  • 1 cup almond milk
  • 1 cup coconut milk
  • ½ cup (100g) chia seeds
  • ¼ cup (50g) Natvia (or preferred sweetener to taste)
  • 4 tbsp. raw cacao powder
  • 2 tbsp. mesquite powder
  • 1 tsp. cinnamon
  • Few drops almond essence (or peppermint if you prefer)
  • Fresh strawberries to garnish (and a dollop of Greek yogurt if you can tolerate dairy)

 

 

Method:

  1. Add all of your ingredients (except garnishes!) into a saucepan and stir over low heat until smooth and thick. (TM – 10 minutes./ 37 degrees / speed 4)

 

  1. Pour into 4 to 6 individual glasses or ramekins and refrigerate for at least 2 hours

 

  1. Garnish with some diced fresh strawberries or berries of your choice and a dollop of Greek yogurt if desired.

 

  1. Enjoy!!

 

 

Makes 4 large or 6 smaller servings
