Protein Lava Cakes

Sugar Free, Gluten Free, Nut Free, Dairy Free, Paleo Friendly, Vegan.

 

Ingredients:

  • 300ml coconut milk
  • 70g plant-sourced protein powder (such as Pea Protein powder), or 100% WPI (Whey Protein Isolate) if you can tolerate dairy.
  • 30g mesquite powder
  • 60g tahini
  • One peeled and quartered orange (you could use another fruit such as a mashed banana or cooked apple if you are not a fan of the chocolate/orange combination.)
  • 50g Natvia (for baking)

Directions

  1. Preheat the oven at 230°C
  2. Mix all ingredients together in a food processor until smooth.  (TM – 10 secs / speed 6, scrape and repeat.)
  3. Pour mixture into individual silicone muffin pans or ceramic dishes if you are happy to serve as little individual puddings.
  4. Bake 10 – 15 minutes at 230°C
  5. Remove from oven and invert onto serving plate. Sift over some Natvia icing mix (or make your own by milling some baking Natvia in the Thermomix), garnish with berries, and for oozing lava centre effect, serve immediately! 😉

 

Makes 6 – 8 individual cakes (depending on the size of your muffin pans)
