Apple crumble

Clean Apple Crumble

Gluten Free, Dairy Free, Refined Sugar Free, Egg Free, Vegan

 

Ingredients:

Apple filling:

  • 750g granny smith apples, peeled, cored and quartered (or cut into cubes if you don’t like your apple quite so chunky!)
  • 1 tsp ground cinnamon
  • ½ tsp ground cloves
  • 200g water
  • 50g sultanas
  • 120g dried figs, stems removed and chopped roughly (or any other dried fruit of choice)

Crumble Topping:

  • 120g Almonds
  • 120g Walnuts or Pecans
  • 50g Oats (make sure they are gluten free if you are gluten intolerant), or quinoa flakes for grain-free option.
  • 40g shredded coconut
  • 20 – 40g Natvia or coconut sugar
    (depending on your sweet tooth!)
  • 40g  maple syrup

 

Method:

  1. Preheat oven to 160C
  2. Place apples in small saucepan sprinkle with spices and add water, sultanas and figs.  Cover and cook for 10 minutes.
  3. Pour cooked apple mixture into the base of a 30cm x 20cm ovenproof baking dish. Set aside.
  4. Chop almonds and walnuts in the bowl of a food processor until chunky crumble texture is achieved.
  5. Add coconut, oats/ quinoa flakes and Natvia and maple syrup. Process on a low speed until well combined.
  6. Scatter the crumble evenly over the top of apples.
  7. Cook in top shelf of oven for about 15 – 20 minutes until brown on top.
  8. Serve with a warm *Coconut Custard (recipe link below) or a dollop of Creamy Greek Yogurt if you are dairy tolerant.

 

 

Thermomix method:

  1.  Preheat oven to 160C
  2. Place apples in Thermomix, sprinkle with spices and add water, sultanas and figs.  Cook for 10 minutes, 90C Reverse + Speed 2. 
  3.  Pour cooked apple mixture into the base of a 30cm x 20cm ovenproof baking dish. Set aside.
  4.  Chop almonds for 2 short seconds Speed 5
  5. Add walnuts.  Chop another 2 seconds Speed 5.  Check consistency and chop a second or 2 longer if a finer crumble is desired.
  6. Add coconut, oats/quinoa flakes and Natvia and maple syrup. Combine for about 20 Seconds, Reverse Speed 3.
  7. Add crumble to top of apples
  8. Cook in top shelf of oven for about 15 – 20 minutes until gently browning.

Lemon Coconut Custard

*Sugar Free, Dairy Free, Gluten Free

 

Ingredients:

  • Zest of 1 lemon (optional)
  • 50g (about ¼ cup) Natvia (or more if you like a sweeter custrard)
  • 30g (2 tbsp.) Cornflour
  • 2 large free range eggs
  • 500g (2 cups) coconut milk 

Stovetop Method:

  1. In a small bowl or mug,  mix cornflour and about 1-2 tbsp. and coconut milk to a smooth paste. Transfer to a medium saucepan and whisk in all other ingredients together ensuring that it’s smooth and lump free.
  2. Over medium heat keep whisking until the mixture starts to become thick and gently bubbling.
  3. Remove from heat and allow to cool before serving.

 

Thermomix Method:

  1. Place lemon zest (if using), Natvia and cornflour into mixing bowl and mill 10 sec/speed 9. Scrape down sides of bowl.
  2. Add all remaining ingredients and cook 7 min/90C/Speed 4.
  3. Serve warm or cool.

 

*Vanilla Custard: Replace lemon zest with 1 tsp Vanilla paste or extract

*Chocolate Custard: Replace lemon zest with 20g cacao/cocoa powder
