 INGREDIENTS:

  • 50g Stevia-sweetened Chocolate (I used Well Naturally mint crisp flavour: http://vitalitybrands.com/well-naturally/products/sugar-free-dark-chocolate), chopped roughly
  • 1 tbsp. (10g) coconut oil
  • 1 cup (250g)  thick coconut cream
  • ¼ cup (40g) Natvia (or preferred sweetener)
  • Few drops *doTerra peppermint essential oil or peppermint essence

 

METHOD:

  1. Place chocolate pieces and coconut oil in top of a double boiler and melt, stirring until smooth. (Or, in a microwave proof jug you can melt together on medium setting in microwave.)
  2. Add coconut cream, sweetener and oil or essence and process until smooth – For best results use a stick mixer.
  3. Pour into glasses or jars and refrigerate overnight
  4. Serve alone or with fruit and a dollop of creamy Greek yogurt (if you are dairy tolerant.)
  5. Enjoy!!
