Quick& Easy Mexican Wraps

Light & Lovely Mexican Wraps

*Dairy Free

Ingredients:

  • 1 tbsp olive oil
  • 1 medium onion, finely diced
  • 1 large carrot, grated.
  • 500g Lean Beef Mince
  • 1 pkt Woolworths Select taco seasoning mix
  • 1 large carrot, grated
  • 150ml water
  • 6 slices Mountain Bread, ( I used Chia but any variety is good – corn might be nice!)
  • 1 large vine-ripened tomato, halved and sliced thinly
  • 1/4 iceberg lettuce, shredded
  • 1 cup grated cheese
  • 1 cup Fresh & Fabulous Guacamole (*see recipe below)
  • 1/2 cup chilli sauce (I highly recommend Byron Bay Coconut Chilli Sauce – YUM!), to serve

Method:

  1. Heat oil in a large frying pan and fry onions and carrots until soft.
  2. Add mince gradually and brown in batches to avoid stewing.
  3. Add seasoning mix, stir through and add the water.
  4. Simmer and reduce for about 15 minutes. Set aside.
  5. Prepare guacamole and set aside.
  6. Warm Mountain Bread either by wrapping in foil and sitting in a low oven for 10 minutes or wrap in plastic and microwave about 1 minute.
  7. To assemble, lay mountain bread flat, length-ways and place a line of seasoned mince from one end to the other (from top to bottom) about 1 inch from the end. Top with cheese, tomato, lettuce, and guacamole. Tuck in the edges and roll quickly to create a nice tight burrito-shaped parcel. Place your wrap on a platter and then repeat with the rest of your bread and other ingredients, until everything is used up.
  8. Serve immediately with extra guacamole and Chilli sauce on the side.
  9. Enjoy!!

 

Fresh & Fabulous Guacamole

*Adapted from Stephanie Alexander’s Cook’s Companion

  • 2 perfectly ripe avocados, peeled and chopped
  • juice of 2 limes or 1 lemon
  • 2 tbs freshly chopped coriander leaves
  • 1/2 – 1 tsp finely chopped fresh chilli
  • large pinch Himalayan sea salt
  • 1 small Spanish onions (or 3 spring onions), finely chopped
Toss avocado in lime juice. Add coriander, chilli, salt and onion/spring onion. Serve as soon as possible. Immediately is best.
