Orange and Chia Seed Cake

Orange and Chia Seed Cake
*Gluten Free

  • 2 whole oranges ¬tops removed and scored with a cross about 3cm deep
  • 6 organic free-range eggs
  • 200g  Natvia
  • 250g almond meal
  • 3 tsp baking powder (Ensure it is a Gluten free brand if allergies are a consideration)
  • 3 tbsp chia seeds, soaked in 1/4c water for about 30mins


1. Place the prepared oranges in boiling water and simmer for 50 minutes.
2. Remove from the water and purée the whole oranges, including peel in a food processor, until smooth.
3. Preheat the oven to 160C
4. In a food processor mix the eggs and xylitol or sweetener until light and fluffy
5. Add the almond meal and baking powder. Mix until combined.
6. Stir in the orange purée and soaked chia seeds.
7. Pour the mixture into a 22cm cake tin lined with greaseproof baking paper.
8. Bake in the oven for about 60 minutes or until firm but still moist.
9. Leave to cool in the tin for about 5 minutes then turn onto a wire rack and cool.
Serve warm with nice creamy Greek yoghurt dolloped on the side. The almond meal provides a gluten-free treat and once again high in protein. This is a twist on the traditional orange and poppy seed cake, but the chia seeds are very high in essential omega 3 fatty acids.
