Spicy Mexican Peppers with Blue Cheese & Walnut Crust

 *Gluten-Free, Dairy Free.

INGREDIENTS:

  • 6 large or 8 medium capsicums (peppers), tops removed, seeded.  Keep the lids (not stalks) and throw them in with the other chopped vegies.
  • 2 tablespoons olive oil
  • 500g turkey mince
  • 1 large onion, chopped
  • 3 minced garlic cloves
  • 500g mushrooms, chopped
  • 3 small Asian or one large eggplant
  • 3 large tomatoes chopped
  • 1 tablespoon tomato paste
  • Fresh herbs to taste ( I used sage, tarragon, rosemary, and thyme to compliment the turkey)
  • 3 tbsp. Chipotle Tabasco (or hot sauce of choice)
  • salt and pepper to taste
  • ½ cup uncooked quinoa
  • 2 eggs

Topping:

  • 100g grated mozzarella cheese
  • 100g blue cheese
  • ¾ cup walnuts

 

DIRECTIONS:

  1. Preheat oven to 180 C.
  2. Prepare your chopped vegetables.  You can save time by placing them in a food processor (I used my beloved Bellini – like a Thermomix), and using a low speed give them a quick zap to get them to a nice roughly chopped consistency.
  3. In a large, deep fry pan brown the turkey until evenly brown and set aside in a bowl. In same fry pan, fry onion over medium heat until soft and brown, add garlic and the rest of the chopped vegetables (except tomatoes) and cook until tender. Return turkey to the pan. Mix in the tomatoes and tomato paste, quinoa and season with herbs salt, pepper and Tabasco.  Cover and simmer for about 12-15mins.   Cool and stir through the eggs.
  4. Stuff your capsicums with the fry pan mixture and place them in a nice deep casserole dish.
  5. Combine the topping ingredients in your food processor and pulse until just combined.  Dived the topping amongst your peppers, pressing on the top of each one.
  6. Cook in a moderate oven for about an hour.
  7. Serve immediately … And save the leftovers for an even better meal tomorrow. To maintain the crustiness of that yummy topping they are best reheated in the oven as opposed to the microwave.
