Brovado Stack!

Layered Chocolate Brownie Heaven

*Sugar-Free, Gluten-Free

Makes 2 stacks

BROWNIE BASE:

  • Flesh of 2 perfectly ripe avocadoes
  • ¼ c baking Natvia (-or more if you’re a bit of a sweet tooth!)
  • 2 Eggs
  • ¼ c Unsweetened Cocoa Powder
  • 1 Tbsp. Vanilla
  • 2 Tbsp. Coconut Flour
  • 1 Tbsp. Mesquite powder
  • 1 tsp. Baking Soda
  • ¼ tsp. Sea Salt

FILLING

  • 4 heaped tbsp.  thick yogurt (I used Jalna Vanilla Yogurt, but you can use any thick yogurt that will hold its shape)
  • About 8 nice strawberries, sliced thinly

ICING:

  • 90g Stevia-Sweetened Dark Chocolate (again, I like “Well Naturally” Stevia-sweetened dark chocolate)
  • 1 Tbsp coconut oil

 

 

Method:

  1.  Puree the avocado flesh in a small food processor or for an even better result I recommend a stick mixer.
  2.  Beat all remaining brownie ingredients together with the avocado in a bowl with an electric mixer until smooth.
  3.  Spoon batter into a greased 20cm square baking dish.
  4.  Bake at 180C for 20 – 30 minutes. Set aside and allow to cool.
  5. Cut cooled slice into 6 even sized rectangles.  Place first rectangle on your serving plate, top with some vanilla yogurt and then follow with the sliced strawberries.  Add another brownie rectangle, followed by the yogurt and strawberries (as per first layer), and top with the third brownie layer.  Repeat to make your second stack.
  6.  Melt chocolate together with coconut oil and stir until smooth.  Pour over each stack and top with a few walnuts if desired.
